Salsa de Tomato Frito -
Tomato Sauce

Salsa de tomate frito is a basic tomato sauce that is made all over Spain.. It can be used as an accompaniment to cooked foods or as a cooking sauce. 

The following recipe is taken from Janet Mendel’s book “tapas a bite of Spain”, published by Santana books and available via our online shop.


350ml/12 ½ fl oz / 1 1/2 cups


1 large tin (700 – 800g / 27-28oz) plum tomatoes, drained liquid reserved
2 x tablespoons olive oil
1 medium onion, chopped
2 x cloves of chopped garlic
4 x tablespoons chopped flat-leaf parsley
1 teaspoon paprika
Pinch of ground cumin
1 x bay leaf
salt and pepper
pinch of sugar
4 tablespoons white wine or reserved tomato liquid


Cut out stem ends of tomatoes and break the tomatoes up slightly. Heat oil in a saucepan. Sauté the onion and garlic until they begin to turn golden, 5 minutes. Add the parsley and paprika. Stir over a medium heat 30 seconds. Add the tomatoes, cumin, bay leaf, salt, pepper and sugar. Add wine or tomato liquid.

Bring to the boil, cover, and simmer until tomatoes are thickened, 25 to 35 minutes. Discard the bay leaf.

Puree the sauce in a blender. If desired, sieve the sauce to make it even smoother. Serve the sauce hot or at room temperature.
